Protein Pancakes

Trying figure out something healthy yet yummy to make for breakfast is no small task. Years ago a friend of my mother’s introduced us to her protein pancakes. Since then I have tweaked the recipe a bit and now it is one of my children’s favorite meals. ┬áThe recipe below is doubled to accommodate my 4 kids but you can easily cut it in half!

In a blender (I use this ninja…if you have just a regular blender you may need to stir it a couple of time since it is thick) add the following ingredients:

8 eggs (local, free-range if possible!)

2 cups cottage cheese

2 cups raw oats (I use quick oats)

2 tsp of Cinnamon

2 tsp real vanilla

Optional: top with mini chocolate chips

After you blend this well you can either cook them on the stovetop or pour the mixture into a large baking pan (I love the stoneware from Pampered Chef for this!) and cook in the oven at 350 for 20 minutes.  Then cut into squares and top with your favorite toppings!
